She Ate It.


So one of my massive challenges in life is getting my 4.5 year old to eat anything other than chicken nuggets.

She's an exceptional fussy eater- she does not eat spaghetti bolognese, she does not eat pizza, she does not eat 99% of the kid food go to options.

One thing she randomly does eat is Mac n Cheese. So I have been playing with mac n cheese recipes to get more goodness into her..

And this  one was a winner.


Kid friendly added goodness Mac N Cheese

Cooking Time: 20-30 Mins
Serves: 2 children 2 adults















INGREDIENTS:

2 cups pasta (I use spirals but chose whatever wins in your house)
2 cups water (just cover pasta and double)
2/3 cups milk
2/3 cups cheese (I use grated cheddar)

Additional optional extras. 
1 can tuna
1 small can corn. 

INSTRUCTIONS:

Cook pasta until cooked. 
Set to boil- 10 mins
Add cheese & milk.
Stir until cheese is melted & starts to thicken (3-6 mins). 
Add optional extras. (Corn, tuna, ham, pre cooked chicken nuggets, peas, salami- whatever your child will eat…)
Add dash of salt & pepper to taste- I'm trying to introduce them to spices so to one dash of salt three twits of pepper)
Cook until melted through nicely (10-15 mins). 
Serve. 

Note on optional extras:
You can get creative here and add whatever you want! I generally do whatever is in the cupboard/ fridge that she eats. This time it was tuna & corn but next time it might be peas & chicken nuggets/ or cold ham & peas/ or salami & corn etc.. options are endless...


Serve.
